Recipe Introduction
This makes a wonderfully nutritious lunch your kids will love in their lunch
boxes, and it's a great way to get them to eat some veggies without them
realizing it. If you want them to also have a little protein, try adding some
chopped up chicken or turkey.
Makes 2 wraps:
List of Ingredients
2 large (9-inch) whole-wheat wraps
6 tablespoons roasted red pepper hummus
1 carrot, shredded
1/2 cup shredded Jack cheese
1/2 cup shredded purple cabbage
1/2 red bell pepper, chopped
2 tablespoons lemon juice
chopped parsley
salt & pepper to taste
Recipe
Spread hummus over wrap. Sprinkle remaining ingredients over hummus and roll
tightly. Cut in half or in several sections to make pinwheels.
