    Kentucky Grilled Cheese Hot Brown

    2 slices peppered bacon (microwaved til crisp & patted dry of fat)
    2 slices salt rising bread
    1 slice sharp American cheese
    1 tsp Hellmann's mayonnaise
    1 tsp butter, softened, not melted
    1/2 of one chicken breast, shredded
    4 very thin ripe tomato slices

    Recipe



    Spread softened butter on both sides of each slice of salt rising bread. Heat Teflon® coated non-stick skillet or griddle and let cool down for a few seconds, then place both slices of bread in the hot skillet, browning lightly on both sides. On one piece (still in the skillet), place cheese, chicken, and bacon, top with tomato slices (salt and pepper if desired). Spread mayonnaise on the other slice of bread and place the other piece of bread (mayo against the tomato slices) on top. Turn the whole sandwich over in the skillet and press down lightly with a spatula to meld ingredients. Keep turning the sandwich to avoid burning until the cheese is melted. Remove from skillet onto plate and cut in triangle halves. Makes 2 sandwiches.
