Little Italy Sausage Sandwiches

Recipe Introduction
Hearty French rolls packed with succulent sauteed sausage and onions, topped with dressed greens.
List of Ingredients
1 pound sweet Italian sausage links, cut in 1/2 lenghwise
1 cup sliced onion
1 can (6 ounces) Hunt's® Tomato Paste
2 cups mixed salad greens
1 cup water
balsamic vinaigrette salad dressing, to taste
4 French rolls (about 6 inches long each), split lengthwiseRecipe
1. Cook sausage and onions over medium-high heat in a nonstick skillet about 10 minutes or until sausage is browned and no longer pink; onions are soft. Blend in paste and water.
2. Bring to a boil; reduce heat to low and cook for 10 minutes. Season sauce to taste.
3. Toss salad greens with dressing. Fill each roll with equal amounts of greens and sausage with sauce. Serve immediately.
Serving Suggestions
Serve a small amount of chilled peperonata or an assortment of olives alongside, if desired.
