1 pound thinly slice corned beef
8 slices thickly cut sourdough bread
1 pinch caraway seed
2 oz butter
2 oz olive oil
1 cup sauerkraut
1/2 cup 1000 island dressing, (chunky)
8 slices swiss cheeseRecipe
Heat griddle to 350 degrees, pour oil, and melt butter add caraway and lightly toast, place pieces of bread down, place cheese on each, add 4 oz corned beef on 4 slices of bread, place well drained kraut on top of corned beef, and even out. When bread starts to color, cap the sandwiches and remove to the oven for 5 minutes. Pull the chilled mugs out of the freezer, and fill them with room temperature Guinness.
