1/4 cup garlic infused olive oil
8 slices hearty Italian bread 1/4 inch thick
2 cups cooked boneless skinless chicken breast (shredded)
1 4 oz can diced green chilies
18 strips crumbled crispy bacon
1 tsp cumin
1/4 tsp cayenne pepper
1/4 tsp roasted garlic seasoning
1/4 tsp salt
1/8 tsp fresh ground pepper
4 slices tomato 1/4 inch thick
2 cups coarsely grated Monterey Jack CheeseRecipe
Brush one side of each slice of bread with oil. Place on working surface oiled sided down. In a medium bowl combine chicken, green chilies, bacon, cumin, cayenne pepper, garlic seasoning, salt and pepper. Gently mix together. Place 1/4 cup cheese on bottom of 4 slices of bread. Spread 1/2 cup chicken mixture over cheese, Place 1 tomato over chicken, then top with an additional 1/4 cup cheese. Top with remaining 4 slices of bread pressing down slightly, oil side up.
Preheat a large in a Teflon® coated non-stick skillet over medium heat for 2 minutes. Put sandwiches in the skillet (in batches if necessary), and cook for about 2 minutes or until the bottom is golden brown and cheese is melting. Turn sandwiches with a large spatula pressing down sandwich lightly and cook for another minute or until bottom is golden brown. Serve immediately. Makes 4 sandwiches.
