    Yields 4 portions

    SAUCE:
    • 1 Cup Heavy Cream
    • ¼ Teaspoon Garlic Powder
    • 1 Tablespoon Grated Parmesan Cheese
    • 1 Tablespoon Grated Asiago Cheese
    • 1 Tablespoon Grated Romano Cheese
    • 2 Ounces Cooking Sherry Wine
    • 1 Tablespoon Spanish Sherry Vinegar
    • ½ Teaspoon Ground Black Pepper

    Procedure for Sauce:
    Bring cream to a simmer over medium heat; add garlic powder and all of the cheeses. Return to a simmer and with a whisk stir cream till cheese is incorporated. Add the Sherry and Sherry Vinegar and return to a simmer. Add black pepper and adjust salt to your taste. NOTE: on the salt, you shouldn’t have to add salt since most cooking sherry’s contain salt and the cheese has natural salt from the aging process.

    REMAINING INGREDIENTS:
    • 2 Each Eight Inch Loaves of your Favorite Herb Focaccia
    • 1 # Mesquite Seasoned Cooked Chicken Breast Cut Into Thin Strips
    • 12 Slices of Ripe 5x6 Tomatoes
    • 2.5 Ounces of Thinly Sliced Red Onion
    • 4 Ounces of Caesar Cheese Blend (Asiago, Romano and parmesan)
    • 4 Ounces of Chopped Romaine Leaves
    • Italian Spice (a blend of dried sweet basil and oregano)


    PROCEDURE:

    Preheat Oven on the Broiler setting.
    Cut the loaves of Focaccia in half so you have 4 four inch loaves. then cut those pieces in half length wise. Ladle an ounce of the Tuscan Cream sauce on each half of focaccia. Put some red onions on the bottom half of the Sub and three tomatoes on the top half of each Sub. Evenly disperse the mesquite-cooked chicken on the bottom halves of the Subs. Cover the top half of the Subs with the Caesar cheese blend and then sprinkle Italian Seasoning all over the Subs. Place the Subs under the broiler open-faced for roughly 1.5 minutes or until the cheese is starting to brown slightly. Remove Subs and place a generous handful of the chopped romaine lettuce on the bottom half. Fold the Sub together, cut in half and enjoy.
