List of Ingredients
4-french baquettes
16-ounces pork tenderloin, cooked, cooled, sliced
4-carrots, grated
4-Thai peppers, chopped
2-cucumbers, peeled, thinly sliced
4-ounces pork or chicken pate
4-shallots, chopped, sauteed
1-Tablespoon fresh lime juice
1-Tablespoon sugar
3-Tablespoons Nuoc Mam sauce (see sauces)
2-1/2-Tablespoons Vietnamese Nuoc Cham (see sauces)
Recipe
Slice the roll open leaving the ends intact to
create a pocket. Put in 2-ounces pate, 4-ounces
pork, and shallots (per bagette). Pile on the
rest of the veggies. Drizzle sauce on veggies.
To make the sauce:
Mix the garlic sauce (Nuoc Cham), lime juice,
sugar, and fish sauce (Nuoc Mam) until the
sugar is dissolved.
(Yield: 4 sandwiches)
