Storm's Mac & Cheez Sandwich

Serves 4
1 box macaroni and cheese
1/4 cup milk
1/4 cup margarine plus additional for spreading on bread
8 slices bread (white or whole wheat)
1 cup shredded cheddar cheese (or American, jack or mozzarella)
8 slices bacon (optional) Recipe
Prepare the macaroni and cheese according to box directions.
While macaroni is cooking, cook bacon in a separate pan to the level of crispness you like. Drain bacon on paper towels.
Spread margarine on one side of each piece of bread.
Assemble sandwiches: Turn the first piece of bread so the margarine side is facing down. Top with a generous layer of mac & cheese. Add 2 slices bacon. Sprinkle with 1/4 cup cheese. Put second piece of bread on top, margarine side out. Repeat for 3 more sandwiches.
Cook sandwiches over medium heat, in a fry pan or on a griddle. When the first side is nicely browned, flip and cook the second side. Be careful when moving and flipping so the mac & cheese stays together.
