Recipe Introduction
This sandwich from Carlo Middione, chef/owner of Vivande Porta Via in
San Franciscois, is a take-off on a croque monsieur. If you don't have
focaccia, use French sandwich bread instead.
List of Ingredients
8 (4 x 4-inch) pieces onion-olive or other focaccia, about 1 inch thick,
cut in half
12 ounces dark or mixed white and dark turkey meat, sliced
Salt and pepper to taste
8 thin slices baked ham
8 thin slices Fontina or Taleggio, about 4 to 6 ounces
The Custard
2 eggs
2 cups whole or 2% milk
1/2 teaspoon salt
Few grinds pepper
For Frying
2 tablespoons extra virgin olive oil, more if needed
Recipe
Place 4 pieces of the focaccia on a work surface. Divide turkey among
them. Season with salt and pepper. Top each sandwich with 2 slices of
ham and 2 slices of cheese. Top with remaining slices of focaccia.
Combine eggs, milk, salt and pepper in a shallow bowl; whisk to combine.
Soak sandwiches, one by one, in egg mixture for about 1 minute per side.
Heat oil in a large skillet. Fry sandwiches on both sides, in batches if
needed, until golden brown on both sides. Slice in half. Yields 4
sandwiches
