4 tbsp softened butter
1/2 tsp chili powder
1/4 tsp ground cumin
1/2 cup jalapeno Jack cheese, grated
1/2 cup cooked ham, finely diced
2 tbsp canned chopped green chilies (poblano), well-drained
2 tsp finely chopped green onions
2 tsp finely chopped fresh cilantro

In a small bowl, mix butter with chili powder and cumin, and set aside. In a medium mixing bowl, combine cheeses, ham, chilies, green onions and cilantro, mixing well with a fork. Spread the cheese mixture on 6 slices of bread, dividing it evenly. Top with remaining slices of bread. Spread tops of sandwiches with half of the reserved chili butter.
Heat a large Teflon® coated non-stick skillet over medium-high heat. Grill sandwiches (in batches if necessary), butter side down, for 3-4 minutes. Spread the tops with the remaining butter while bottoms are grilling. Turn sandwiches when golden brown, press sandwiches down with spatula and grill for 2-3 minutes until golden brown. Turn sandwiches again and grill for about 30 seconds until cheese is completely melted. Cut each sandwich in half and serve hot. Makes 6 sandwiches.
