    Californian Pork Sauce For Pasta

    3 tablespoons extra virgin olive oil
    1 lb lean pork tenderloin or steaks, cut into small dice
    1 (14 oz) can tomatoes
    1 bunch of scallions, finely chopped
    1 red pepper, seeded and very finely chopped
    Small piece root ginger, peeled and grated
    2 cloves garlic, peeled and crushed
    Juice of 1 lime
    Large punch fresh cilantro, coarsely chopped
    2 tablespoons roasted peanuts

    Recipe



    Heat the oil in a large pan and fry the pork until it is lightly browned
    all over.

    Add the contents of the can of tomatoes and all the remaining
    ingredients except the cilantro and peanuts.

    Bring the mixture to the boil and cook over a medium heat for 15
    minutes, stirring from time to time.

    Add the cilantro and cook for a further 5-8 minutes while you prepare
    your chosen pasta.

    Drain the pasta, toss with the sauce and sprinkle on the peanuts.

    Servings: 4
