    1 tablespoon margarine
    1⁄4 cup diced yellow onions
    2 dried guajillo chilies, seeded
    1 tablespoon achiote spice, see notes
    1 tablespoon chopped garlic
    12 ounces orange juice
    1⁄2 cup unsalted butter
    1⁄4 teaspoon salt

    Cooks Notes: Achiote spice, a paste made from annatto seeds, lime juice and spices, can be found in most Mexican markets and some supermarkets. Guajillo chilies are found in the spice section or Mexican section of most markets.

    Heat margarine and lightly saut yellow onions, guajillo chile, achiote and garlic. Add orange juice reduce liquid by 40 percent, which takes approximately 15 minutes. Transfer to blender. Add butter and salt to blender and puree. Serve with grilled chicken.
    Yield: Serves 6
