    Hotel Leland Horseshoe Sauce, Springfield, Illinois

    List of Ingredients




    1/2 lb. butter
    1 Tbs. salt
    1/8 tsp. pepper
    1/8 tsp. dry mustard
    1/2 lb. flour
    1 qt. milk
    1 Tbs. Worcestershire sauce
    1 lb. Velveeta or Old English cheese
    1 pint beer

    Recipe



    1. Melt butter; add flour and milk.
    2. Add rest of ingredients, except beer and cook, stirring until smooth.

    3. Add beer just before serving.

    Makes 2 quarts.

    Notes: This freezes well but do not add beer until it has been thawed
    and
    reheated.

    To serve, layer toast, meat (chicken, hamburger, ham) cover with French
    fries
    and top with horseshoe sauce.
