8 cloves garlic
1 medium yellow onion
Olive oil
1/2 bunch Italian flat-leaf parsley, chopped
1/2 bunch fresh basil, chopped
2 28-ounce cans whole, peeled tomatoes
1/4 teaspoon crushed red pepper
2 teaspoons sugar
Salt and black pepper to tasteRecipe
Chop garlic and onion; the finer the chop, the more potent the
flavor. In a large skillet, lightly brown garlic and onion in olive
oil. Add parsley and basil. Squeeze in tomatoes with juice. Add red
pepper. Add sugar to balance tomato acid. Salt and pepper to taste.
Bring to boil, then reduce heat to medium and simmer until sauce
thickens, 20-30 minutes.
