Mustard Brandy Cream Sauce

2 Tbsp butter
2 Tbsp olive oil
4 Tbsp dijon mustard
2 tps worcestershire sauce
1/2 cup brandy or other dry liquor
1 cup whipping cream Recipe
Melt butter and olive oil in skillet over med-high heat. If cooking steaks, Remove steaks to platter or individual plates before proceeding. If cooking pork, brown pork in pan, cover, and cook until done; It is not necessary to remove pork before proceeding (steaks are removed to prevent them from overcooking) but makes stirring the sauce easier.
Add mustard and Worcestershire to skillet. Season with pepper and stir to combine. Remove skillet from heat. Add brandy and ignite. When flames cease, return skillet to heat. Add cream; boil a few minutes until reduced to desired thickness. Sauce should be the consistency of heavy cream. Serve sauce over meat.
