    List of Ingredients




    1 minced white onion
    1 ounce chopped garlic
    1/2 cup olive oil
    1/2 cup vermouth
    1 cup apple cider wine vinegar
    1/4 cup liquid smoke
    1 tbsp chopped rosemary
    1/2 cup diced plum tomatoes
    1 cup fresh cranberries
    1 cup dark brown sugar
    1/2 cup tomato puree
    1/2 cup maple syrup
    1 pint cranberry juice
    2 cups sun dried cranberries
    Julienne zest of 2 lemons
    Juice of 2 lemons
    1 bunch chopped flat leaf parsley
    salt and cracked black pepper to taste

    Recipe



    In heavy skillet, heat olive oil, add in onions, and sauté on low heat. Caramelize the onions. When onions are deep brown after 15-20 minutes, add in the remaining ingredients: chopped garlic tomatoes, tomato product, fresh cranberries, lemon zests, vermouth, rosemary, sugar, and parsley.
    Bring to a boil, add in lemon juice, salt and cracked black pepper, and then simmer for 10 minutes. Add in sun dried cranberries at this point as well.
    Puree the whole mixture in a blender.

    This sauce is great for swordfish and grilled shrimp.
