    2 large onions, sliced 1/4" inch thick
    1 3/4 tablespoons Brandy
    1 1/3 teaspoons whole grain mustard
    1 1/3 teaspoons sugar
    1/2 teaspoon Raspberry vinegar
    1/2 teaspoon salt and pepper (to taste)

    Place onions in a medium skillet over medium high heat. The secret
    to this recipe is to let the onions caramelize to bring out their natural sugar.
    Sauté slowly, stirring infrequently to allow the onions to brown. Stir only
    enough to keep from burning.

    After the onions have cooked down and have browned entirely, deglaze the pan
    with the Brandy. Add the remaining ingredients. Salt and pepper to taste. Serve
    hot or chill in the refrigerator and reheat as needed.

    The marmalade has a refrigerator shelf life of 7 to 10 days.
