    Wild Mushroom and Horseradish Sauce

    1 pound wild mushrooms, sliced
    2 Tbsp. prepared horseradish
    1 shallot, peeled and dinced
    1 clove garlic, minced
    1/4 cup vermouth or dry white wine
    1/2 cup heavy cream
    2 Tbsp. beef stock
    2 Tbsp. olive oil
    salt and pepper, to taste

    Recipe



    1. Heat the oil in a large pan and saute the garlic and shallots
    until fragrant. Add the mushrooms and cook until they begin to
    soften, about 3 minutes. Add the wine and reduce until almost dry.

    2. Add the horseradish, beef stock and cream. Reduce until the
    mixture thickens and coats the back of a spoon. Season with salt and
    pepper, to taste.
