    "Not Tomato Sauced" Barbequed Chicken

    2 three and one half pound chickens, cut into quarters
    Juice of 2 lemons (about 1/3 to 1/2 cup or so)
    4-6 large garlic cloves, peeled and minced
    1/4 cup of coarse salt
    2 tablespoon of Sweet Hungarian Paprika
    2 teaspoons ground red pepper, or to taste.
    Optional: 1/2 teaspoon of ground thyme and 2 teaspoons of dried crushed rosemary leaves.

    Leave the skin on the chicken and rub them with the lemon and garlic. Combine the salt, paprika, red pepper, (and the ground thyme and crushed rosemary leaves if using), and sprinkle over the chicken. Place skin side up on the wire racks over a baking sheet and refrigerate for at least 8 hours. Preheat the oven to 300 and bake the chicken for 1 hour on the rack. While it is baking, prepare the charcoal grill. Remove the chicken from the oven and place on the charcoal grill and grill turning every so often for about 15 minutes per side until they are completely done and nice and crispy skinned.
