List of Ingredients
1 bunch watercress, (about 3 cups)
1 medium zucchini
1 medium onion
2 garlic cloves
2 tablespoons unsalted butter
2 cups chicken stock
1/4 teaspoon white pepper
1 teaspoon curry powder
1 teaspoon prepared horseradish
salt, if desired
Recipe
Wash the watercress and slice the zucchini.
In a large saucepan, sweat the onion and garlic in the butter, and add the chicken stock and seasonings. Add the watercress and zucchini and cook about 12 minutes, or until tender.
Puree in a blender or food processor.
Cool in the refrigerator and serve at room temperature.
Serves 6-8.
