Alaskan Amber And Cheddar Soup

1 small onion, finely chopped
4 tablespoons butter
1 tablespoon freshly chopped garlic
1 cup chicken broth
2 cups milk
1/2 cup instant mashed potatoes (see Note)
1 1/2 cups shredded sharp cheddar cheese
1/4 teaspoon hot sauce
Sprinkle of nutmeg
Salt and pepper to taste
1 bottle amber beer
Recipe
Saute onions in butter in a 2-quart saucepan over low heat until transparent. Add garlic and increase heat to medium. Add broth and milk. Stir well and whip in mashed potato mix. Stir until smooth; simmer 4 to 5 minutes. Sprinkle in cheese, stirring constantly. Season with hot sauce, nutmeg, salt and pepper. Keep stirring until cheese is melted.
Add beer last. Serve immediately.
Note: If you are a purist, by all means use fresh mashed potatoes, about 1 cup.
Makes 4 servings.
