Apple Bacon Tomato Soup

2 cups Beef Stock
1/2 cup Red Wine
5 slices Bacon
2 stalks Celery, chopped
1 15.5 oz can Pinto Beans
1 14.5 oz can Italian Style Tomatoes
1 medium Apple, thinly sliced
1 bay leaf
1/2 medium White Onion, chopped
1 tbsp Olive Oil
2 tsp Garlic, minced
Salt and Pepper to Taste
Recipe
Cook the bacon in a large skillet over medium heat until evenly brown. Drain the bacon, chop coarsely and set it aside. In the same pan, heat the olive oil over medium heat. Saute the onion and garlic for 4 minutes or until tender. Stir in the beef stock, pinto beans, tomatoes, celery and bay leaf. Bring to a boil then reduce then heat and simmer. In a small saucepan over medium heat, cook the apple in the red wine until they are soft. Mix the bacon, apple and red wine into the soup and simmer. Yield: 8 servings
