    Bacon Soup with Cheese Croutons

    List of Ingredients




    4 slices bacon, chopped
    1 clove garlic
    ½ onion, chopped
    2 tbsp olive oil
    ½ pack spinach
    290ml/10fl oz boiling water
    1 chicken stock cube
    2 slices bread
    2 tbsp olive oil
    55g/2oz blue cheese, sliced

    Recipe



    1. Preheat the oven to 220C/425F/Gas 7.
    2. Fry the bacon in the olive oil for two minutes.
    3. Add the onion and garlic and continue to fry for three minutes.
    4. Add the spinach, water and stock cube and bring to the boil.
    5. Simmer for 5-6 minutes.
    6. Blend the soup in a food processor.
    7. Drizzle the oil over the bread and place the slices of cheese on top.
    8. Place in the oven for 6-8 minutes until the cheese has melted.
    9. Serve the soup with the croutons.
