Broccoli Chowder

List of Ingredients
4 cups Chopped broccoli
Roux:
3 cups Flour
1 cup Margarine
Onion
Chicken base or stock
1/2 gallon Milk or heavy creamRecipe
Fill one gallon pot with about 1 1/2 qts water, add onions, chicken base and cook until onions are soft. Add broccoli and pepper. Boil until broccoli is el dente. Now add milk (don't bring to boil) add the roux to thicken. (If soup is too thick add milk). Garnish with thin slices of cooked ham, optional.
