California Beef Stew

1 pound beef stew meat
1 (10 1/2-ounce) can condensed beef consommé
1/2 cup dry red wine
OR
1/2 cup water
1 (16-ounce) package frozen stew vegetables
1 (6-ounce) can pitted whole ripe olives -- drained
Chopped parsley -- if desired
Recipe
Mix beef, consommé and wine in Dutch oven. Heat to boiling, stirring occasionally; reduce heat to low. Cover and simmer 15 minutes.
Stir in vegetables. Cover and simmer about 15 minutes or until beef is tender. Stir in olives; heat through. Sprinkle each serving with parsley.
