California Carrot Soup

8 Medium carrots, peeled and chopped
4 Small potatoes, peeled and chopped
1 Medium onion, chopped
1 zest of an orange
1 juice of an orange
2 Tablespoons olive oil
2 Tablespoons brown sugar
1 Tablespoon chopped garlic
1 Teaspoon ginger root, peeled and chopped
5 - 8 Fresh basil leavesRecipe
1. Have all cutting and chopping, etc. done before starting to cook.
2. Heat olive oil in a soup pot and cook onions over medium heat until translucent.
3. Add carrots, stirring for 2 minutes.
4. Add potatoes, stirring for 2 minutes.
5. Add orange zest, garlic, ginger and basil. Cook on high heat for 5 minutes, stirring constantly so nothing sticks.
6. Add enough water to cover vegetables and simmer for 30 minutes or until vegetables are soft.
7. Let cool to room temperature (I didn't bother) and stir orange juice and brown sugar into mixture.
8. Puree in blender or food processor until smooth. Add more water if too thick.
9. Heat and serve.
