LETTUCE PEA ONION STEW

3 potatoes, half cooked and cut into 1-inch squares
1 carrot, sliced very thin
1 large onion, chopped in about half-inch pieces
1 large head iceberg lettuce, stem removed
1 pound frozen peas
1 cup chicken stock
1/4 cup parsley, minced
2 cloves garlic, minced, or 1 tablespoon garlic powder
4 ounces white wine
1/4 pound butter
2 teaspoons salt
1 teaspoon pepper
1 tablespoon flour Recipe
In a large bowl, chop up the lettuce into about 1-inch pieces.
In a large fry pan or pot, melt all the butter and put in the lettuce. Stir-fry until the lettuce is about 3/4 wilted and remove from heat. Then in a large pot, place all the ingredients except the lettuce and flour. Bring to a simmer covered for 35 minutes and remove from heat. Stir in the lettuce, then the flour slowly, and add more if desired. Heat again slowly while stirring until flour thickens. Serve hot.
Salt and pepper to taste. Top with cheese if desired.
