List of Ingredients
* 1/2 cup red onion (chopped)
* 1/2 cup carrot (chopped)
* 1/ cup celery (chopped)
* 2 cups sliced mushrooms (total)
* 3 cups chicken stock
* 1 tbls. chopped parsley (fresh)
* 1 tbls. chopped oregano (fresh)
* 1 tbls. diced red pepperRecipe
1. In a medium sauce pot saute' the onion, carrot and celery for five minutes.
2. Hold the stock and simmer for 5 more minutes.
3. Add the mushrooms a little bit at a time to layer the flavors. (About every five minutes.)
4. Finish the soup with the fresh herbs and peppers.
5. Serve very hot.
