New York Style Beef Minestrone

1 15 ounce bag New York Corner Café Minestrone Soup™ kit
1 pound beef caldillo (3/8 inch cubes)
1 medium onion, chopped
4 cloves garlic, chopped
1 tablespoon oil
salt
ground black pepper
2 14 1/2 ounce cans chicken broth
2 14 1/2 ounce cans beef broth
1 28 ounce can diced tomatoes
4 cups chopped fresh cabbage (about 1/2 small head)
2 medium carrots, diced
Recipe
1. Place 2 quarts water in a 4-quart pot over High heat. Add beans from soup packet and bring to a boil; reduce heat to Medium and boil 10 minutes. Remove from heat, cover and let stand 1 hour. Drain beans, rinse and drain again.
2. Chop onion and garlic. Heat oil in a 6-quart pot over Medium-High heat. Sauté beef, onion and garlic 8 to 10 minutes or until beef is no longer pink. Stir in dried vegetable packet from soup kit. Add drained beans, broth and tomatoes. Bring to a boil over High heat; reduce heat to Medium-Low, cover and simmer 1 hour or until beans are tender.
3. Meanwhile, cut cabbage in half; remove core. Slice thinly, then stack slices and chop into 1/2-inch pieces. Cut carrots lengthwise into thin slices, then chop into 1/4-inch dice.
4. Stir pasta from soup kit into soup; add carrots and bring to a boil. Cook over Medium heat 5 minutes. Stir in cabbage; add 1 to 2 cups water until soup is desired consistency; cook 5 minutes or until pasta is tender and cabbage wilts. Serve hot.
