Pepperoni-Chicken Soup

List of Ingredients
1 cup onion -- chopped
2 cloves garlic -- chopped
1 whole green pepper -- diced
16 ounces tomato wedges, canned
1 cup rice
2 cans chicken broth
20 ounces chicken
6 ounces pepperoni slices
2 cans water
1 can beer
1 tablespoon oregano
1/2 teaspoon red pepper flakes
1 whole bay leaf
1 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon black pepper
Recipe
Boil chicken until tender; remove chicken from bone. Combine all ingredients except beer and simmer for 1 hour. Add beer before serving.
This recipe came from my DH's Golfing Buddy. He is a very good cook.
NOTE #1 : This is a very spicy soup. Don't forget the beer. Without it, it just doesn't taste as good.
Note #2: I use pasta instead of rice. Any kind as long as it is very small pasta.
Note #3: I also use all white meat chicken cut into bitesize chunks.
