Quintana’s Gazpacho Soup

List of Ingredients
2 Large ripe tomatoes, seeded and membrane removed
1 Large sweet green pepper
1 Clove garlic
½ C Mixed herbs (cilantro, chives, and tarragon), washed and chopped
½ C Olive oil
3 Tbsp Lemon juice
3 C Chilled consommé’ or light beef stock
1 Sweet Spanish onion
1 C Cucumber, peeled, seeded and diced
1 ½ tsp Salt
½ tsp Paprika
2 Large jalapeno, seeded and chopped
1 C Watermelon or cantelope, fresh cutRecipe
Add all ingredients and chill for two hours before serving.
Serves 6.
