SAUERKRAUT `HANGOVER' SOUP

List of Ingredients
1 lb. sauerkraut in plastic bag
3 1/2 T. packed dark brown sugar
1 can (28 oz.) crushed tomatoes in puree
Kosher salt and freshly ground black pepper to taste
Recipe
Put sauerkraut with its liquid and 3 T. brown sugar in a large enamel pot and cook over medium heat for 5 minutes.
Add the crusted tomatoes and puree. Add 2 c. water, 1 t. kosher salt and freshly ground black pepper to taste. Cover and simmer 30 minutes. Add remaining 1/2 T. brown sugar to balance flavors. Cook 1-2 minutes uncovered. Serve hot. Makes 7-8 servings.
