    Sassy Black Bean and Chicken Soup

    1-1 1/2 pounds boneless\skinless chicken breast (cubed)

    1 Tblsp. olive oil

    2 cloves garlic (minced)

    1 onion (coarsley chopped)

    2 15 oz. cans black beans, drained and rinsed, or 2 cups

    of dried black beans prepped per instructions on bag

    1 large can of stewed or crushed tomatoes, unsalted so

    you can control the salt

    1 10 oz. can of chicken broth or homemade chicken stock

    1/2 cup of picante sauce or salsa (heat is up to you) try

    medium the first time

    1/4 cup water or add 1/4 cup chicken broth if you prefer

    1-1 1/2 tsp. ground cumin

    2 Tblsp. fresh lime juice

    chopped fresh cilantro (optional garnish)

    brown or white rice already cooked (optional)

    Heat oil in large saucepan. Over medium heat saute onion and garlic until translucent. DO NOT burn garlic!! Add beans and next five ingredients; stir well. Bring to a boil and immediately reduce heat. Simmer uncovered 15 min. Remove from heat and stir in lime juice. Ladle into bowl with or without rice. Garnish with cilantro Yeilds approx. 4-6 servings
