    Recipe Introduction


    Lisa, our photographer, created this terrific Thai recipe. A great lunch for the ladies.

    List of Ingredients




    2 skinless boneless chicken breasts
    1 tsp. grated ginger root
    2 garlic cloves, minced
    1/4 cup fresh lime juice
    2 - 10 oz. cans chicken broth
    1 1/2 cans water
    1 ripe papaya, peeled and cubed
    4 green onions, sliced
    2 Tbsp. chopped cilantro
    1-2 Tbsp. fresh lime juice
    1 tsp. chili oil or cayenne to taste



    Recipe



    Cut chicken in bite-sized pieces. Marinate in ginger, garlic and lime juice for 1/2 hour. Add chicken and marinade to broth and water. Bring to boil; reduce to simmer for about 5 minutes. Add papaya. Simmer 3 minutes. Add green onions, cilantro, lime juice and chili oil. Serve with bread sticks. Serves 4.
