List of Ingredients
1/8 cup olive oil, for sauteing
1 medium onion, chopped
2 cloves garlic, finely chopped
2 cans Progresso Minestrone Soup
2 cans Whole kernel corn, drained
2 cans pinto beans
2 cans rotel diced tomatoes & green chilies
2 cans diced tomato
2 cans green beans
1 quart fresh okra, cut 1/2-inch thick (optional)
4 each beef bouillon cubes
2 cans water
1/4 teaspoon chipotle chile pepper spice
Recipe
1. Heat Olive Oil, add onion and garlic and saute until soft.
2. Add the rest of the ingredients, bring to a boil and simmer 20 to 30 minutes
sometimes I will sub. the okra for 1/4c pearl barley, or for small shell pasta. You can leave it out all together if you like, but if added it will make the soup just a bit more hearty.
