Chef Sean Brock simmers garlic cloves in milk and then drains them — five times in a row — to create the mild flavor in this snazzy soup.
List of Ingredients
1 cup peeled garlic cloves (pre-peeled cloves can be purchased in the refrigerated section of most large grocery stores)
Milk as needed (at least 2 cups)
2 14-ounce cans vegetable stock
2 cups heavy cream
Salt and white pepper to taste
Recipe
Place peeled garlic cloves in a medium saucepan, pour in enough milk to cover. Place over medium-low heat. Cook about 5 minutes, or until milk begins to steam and barely bubble, but don't let it boil.
Garlic cloves and milk are included in Capitol Grille's sweet garlic bisque.
Drain, discarding milk.
Repeat 5 times. Simmering the garlic 5 times in fresh milk tones down the intense flavor and is, according to Brock, the most important step.
Place rinsed garlic cloves in a medium stockpot. Cover with vegetable stock. Simmer over medium heat about 20 minutes, or until the garlic is soft and can be mashed easily with a fork.
Add heavy cream; simmer 10 minutes. Season with salt and pepper. Puree in a blender. Strain through a wire mesh strainer.
Serves 4, as a side course.
