This is a great soup and a very simple traditional Chinese family herb soup
List of Ingredients
¾ pounds. spareribs - separated
2 ¼ cups watermelon - diced
3 slices ginger
3 ea. figs, dried
1 1/2 gallons water
1/2 teaspoon salt
Serving ideas: Wide soup bowls, to show rib garnish.
Recipe
1. Saute ribs for a minute to brown them on the outside.
2. Wash all ingredients and place in a large pot with the water.
3. Heat water until boiling, then turn to low and cook another 45 minutes.
4. Add salt to taste and skim the oil off before service.
