"Soulful" Stew

List of Ingredients
• 2# Boneless, skinless Chicken thighs or breasts, cut into 1”x3/4” strips
• 1/2 c. flour
• 1/4 c. oil
• 2 c. chopped onions
• 3 bay leaves
• 1 1/4 c. green pepper, chopped
• 1 jalapeño pepper, minced
• 2 c. carrots, cut in rounds
• 1 15oz.can black eyed peas, drained
• 4-6 garlic cloves, minced
• 1# ham, diced
• 1 c. chicken stock
• 1 can (12oz) chopped tomato
• 1 c. Favorite bbq sauce,
• 1 tbsp. Worcestershire sauce
• 1 15oz can sweet corn
• 1 10oz bag fresh spinach (cut in ribbons)
• 1 tsp cumin
• 1 tbsp. fresh thyme
• 1 tbsp. oregano
• salt, pepper & hot sauce to taste
Recipe
Step 1: Toss chicken with 1/2 c. of flour seasoned with salt & pepper.
Step 2: Heat oil ‘til hot and brown chicken in batches. Remove from pan and set aside.
Step 3: Sauté onions, peppers & bay leaves ‘til soft. Add ham and garlic and cook 2 minutes.
Step 4: Add browned chicken to large pot with juices, then add chicken stock, BBQ, Worcestershire, and carrots. Bring to a boil then simmer ‘til carrots and soft, approx. 15-20 minutes.
Step 5: Add black eyed peas, corn, fresh spinach, cumin, thyme and oregano and simmer for 15 minutes, or until all flavors are blended.
Step 6: Adjust taste with salt, pepper, and hot sauce.
