Chipotl� White Cheddar Mashed Potatoes

List of Ingredients
3-1/2 pounds Russet potatoes, peeled, cut into 1-inch pieces.
2/3 cup of milk
cup of cheddar cheese
4 tablespoons butter (optional)
3 tablespoons Chipotl� Salsa Recipe
Cook potatoes in boiling salted water until very tender. Drain. Add Cheddar Cheese, Butter, and Milk. Using an electric mixer, beat until smooth. Stir in Jos� Madrid Chipotl� Salsa. Season to taste with salt and pepper. Sprinkle with parsley.
Serves 6.
