Crispy Onion Rings

4 jumbo yellow onions
2 cups buttermilk
4 cups flour
1 tsp. salt
1 tsp. pepper
Canola or peanut oil
Recipe
Peel onions and slice into 1/4" rings. Remove centers and rinse with water. Soak in cold buttermilk. Mix flour, salt and pepper. Remove rings from buttermilk and dredge in flour mixture. Fry in hot oil 2-3 minutes until crisp and golden brown.
Serves 4.
