Fried Taters and Onions

10 red potatoes, sliced thin
1 large yellow onion, chopped
¼ cup cheese, grated your choice (cheddar, swiss, sharp, pepper jack, etc) optional.
Butter or vegetable oil.
Salt and pepper Recipe
Melt butter or oil in large skillet and add onions, cook until translucent.
Stir in potatoes, stirring occasionally, keep covered until potatoes are soft.
When potatoes are cooked they should be golden brown and soft, at this time sprinkle cheese on top and warm till the cheese is melted.
Remove from heat and serve.
