Recipe Introduction
This well-known South African curry dish usually served as an accompaniment with roasted meats. Hot, cooked white rice is also served on the side with this dish.
List of Ingredients
3 tablespoons vegetable oil
� 2 cups coarsely chopped onion
� 2 cloves garlic, minced
� 2 jalape�o chiles, seeds and stems removed, chopped
� 1 cup peeled, chopped tomato
� 1/2 teaspoon turmeric
� 1/2 teaspoon salt
� 1/2 teaspoon cumin
� 1 teaspoon ground coriander
� 2 teaspoons Malawi Curry Powder (see recipe)
� 1/4 cup water
� 2 bay leaves
� 3/4 pound minced beef
� 1 beaten egg
� 1/2 teaspoon freshly ground pepper
� 2 cloves garlic, minced
� 1/4 teaspoon nutmeg
� 1/2 teaspoon cinnamon
Recipe
Heat the oil in a large skillet and saute the onion for 3 minutes. Add the garlic, chiles, tomato, turmeric, salt, cumin, coriander, curry powder, water, and bay leaves; cover the mixture and simmer for 15 minutes, stirring once or twice.
While the onion mixture is simmering, combine the beef, egg, ground pepper, garlic, nutmeg, and cinnamon in a medium bowl. Form the mixture into 1 1/2 inch balls and add them to the simmered mixture. Cover and continue simmering for 20 minutes more. Remove the bay leaves before serving.
Variation: Add 1 cup unflavored yogurt to the mixture 15 minutes before the end of the cooking time.
