Grandmother's Fried Tomatoes and Gravy

6 strips bacon or 6 tablespoons vegetable oil
1/2 teaspoon salt
1 to 1 1/2 cups flour, divided
6 fully ripened tomatoes
1 1/2 to 2 cups milk
Recipe
In a medium skillet over medium heat, fry bacon and remove from pan; set bacon aside. (If using vegetable oil, heat oil now.)
Combine salt and flour in a shallow dish. Thickly slice tomatoes and dredge in salted flour. Fry each slice in fat until flour is nicely browned. Slices will break up somewhat, and bits of tomato and flour will collect in the
pan.
Place fried slices in a serving bowl, draining fat and juice from the bowl back into pan. When all tomatoes are fried and in serving bowl, gradually add flour to the hot pan, stirring constantly to blend the flour with the fat, juice and bits of tomatoes. Gradually add milk, stirring constantly, to make a thick (but not stiff) gravy.
Pour gravy over tomatoes in serving bowl. If using bacon, pile it on top of tomatoes.
Makes 2 servings.
