Greek Stuffed Tomatoes

2 tablespoons olive oil
1 small onion, diced
2 cups spinach, chopped and cooked
2 teaspoons dried basil
1/2 cup bread crumbs
1 egg
1/2 pound feta cheese, crumbled
salt, to taste
pepper, to taste
6 firm tomatoes, with insides scooped out
Recipe
a saucepan, heat oil and sauté onion until translucent. In a bowl, combine the sautéed onions with all remaining ingredients except tomatoes. Stuff filling into tomatoes. Bake in a preheated, 350 degree F oven for 15 minutes.
Yield: Make 4 to 6 servings.
