# 1 tablespoon olive oil
# 3⁄4 cup diced red onion, 1⁄2-inch dice (about 1 large onion)
# 2 cups diced Idaho or russet potatoes, skins on, 1⁄2-inch dice (about 2 medium potatoes)
# 1 cup diced sweet bell peppers, 1/2-inch dice (about 1 large pepper)
# 1⁄2 teaspoon minced jalape�o pepper (about 1⁄2 pepper)
# 1 small clove garlic, minced
# Dash cayenne pepper
# Kosher salt
# Freshly ground black pepperRecipe
Warm the olive oil in a large iron skillet and cook the onion over medium heat until it turns translucent. Add the potatoes, peppers and garlic, stirring constantly. While stirring, add cayenne, salt and pepper to taste. Cook until crispy and golden brown.
Serves 2.
