Neera's Jerky Potatoes, Jamaican Style

Take one large potato, diced
one large onion, finely chopped
1 tblsp Jamaican Jerk Spice
2-3 tblsp oilRecipe
Heat the oil in a non-stick skillet. Add the onions and saute until light golden brown. Take care not to burn the onion at this early stage, so keep the heat low. This may take up to 15 minutes.
Add the Jerk spice and stir for a minute or two. Add the potatoes and cook until the potatoes are soft. Serve as a side dish or eat with warm, fresh pita.
Serves 4.
