    12 to 18 small red potatoes
    1/3 cup mayonnaise
    1/3 cup sour cream
    1/3 cup shredded Asiago cheese
    Fresh parsley to taste

    Heat oven to 325 degrees. Parboil potatoes until fork tender. Drain and cool. If necessary, cut a thin slice from the bottom of each potato so it will stand upright. Slice off the potato tops and scoop out the fleshy part, discarding or keeping for another use, leaving a potato shell.

    Thoroughly blend mayonnaise, sour cream and cheese and spoon into potatoes. Bake potatoes on a non-stick baking sheet for 15 to 20 minutes, or until thoroughly heated and the tops begin to brown. Garnish with fresh parsley and serve immediately. advertisement
