Philly Cheesesteak Potato Packets

8 medium russet potatoes (about 3 1/2 pounds), thinly sliced
1 medium onion, diced
1 red bell pepper, diced
8 slices deli roast beef, chopped
8 oz. Blue cheese, crumbled (or Provolone, Mozzarella or Cheddar, shredded)
1/4 c. olive oil Recipe
Cut eight 12-inch squares heavy-duty aluminum foil. Brush each sheet lightly with oil. In large mixing bowl, toss potatoes with remaining oil. Add onion, pepper, roast beef and half the cheese.
Divide mixture between foil sheets and top with remaining cheese. Fold foil packets into "purses," leaving space in the top so cheese won't stick.
Cook on grill until potatoes are fork tender, about 50 minutes. Or bake in a preheated 400-degree oven for about 50 minutes.
