Potato Latkes

List of Ingredients
# 4 large potatoes
# 2 eggs
# 1 teaspoon salt
# 3 tablespoon flour
# 1 teaspoon grated onion
# 1/2 teaspoon baking powder
# dash of cinnamon
# fat for frying Recipe
1. Peel the potatoes, grate on a fine grater and pour off half of the liquid.
2. Beat the eggs and add to the potatoes with the other ingredients.
3. Drop the mixture by the spoonful onto a hot well greased frying pan.
4. Turn with a spatula and brown on both sides.
5. Serve hot with applesauce, sugar or sour cream.
Tip: For a lighter texture, one cupful of cooked and mashed potatoes may be substituted for one of the raw potatoes.
