List of Ingredients
1 Q dried black eyes peas
1/2 c celery-dice into small pieces
1/2 c green pepper-dice into small pieces
1/2 c red pepper-dice into small pieces
1/2 c carrot-dice into small pieces
1/2 c white onion-dice into small pieces
1 T dried oregeno
1 t cumin
1 t white pepper
1 t black pepper-coarsely ground
1 t fresh chopped garlic
2 T vegetable oil
1-1/2 Q chicken stock
Recipe
Add peas to one gallon cold water, slightly salted, and bring to a boil; simmer
for 10 minutes.
Saute vegetables and garlic in oil for 2-3 minutes. Add spices and saute for
additional minute.
Drain peas and add vegetables along with chicken stock.
Cook for an additional 15 minutes or until peas are tender.
Do not drain excess juice.
ADDITIONAL COMMENTS
Serve with juices.
